Salmon Croquettes

Growing up, these were a quick Sunday-night supper that the whole family loved. These crispy little fish patties are great served alongside mashed potatoes or cheese grits, so they work perfectly using the grits from the Coastal Shrimp and Cauliflower Grits. Old Bay Seasoning really makes these croquettes shine. Itâs a hard seasoning to replicate, but it isnât an absolute necessity. If you do have it, definitely use it.
1 (14.75-ounce) can pink or red salmon, drained
½ cup almond flour
1 egg, beaten
1 tablespoon mayonnaise
1 tablespoon lemon juice
2 or 3 scallions, sliced
¼ cup finely minced celery or red bell pepper
½ teaspoon dried dill
¼ teaspoon freshly ground black pepper
¼ teaspoon Cajun seasoning
¼ teaspoon Old Bay Seasoning (optional)
Olive oil or butter, for frying
1. In a large bowl, combine the salmon, flour, egg, mayonnaise, lemon juice, scallions, celery, dill, pepper, Cajun seasoning, and Old Bay Seasoning (if using) and mix well.
2. Using your hands, form the mixture into 6 patties about 1 inch thick. Refrigerate the patties for 30 minutes.
3. Heat a thin layer of oil in a skillet over medium heat and fry the patties for 3 to 4 minutes per side, using a spatula to turn.
4. When golden brown, transfer the croquettes to a paper towelâlined plate or onto a baking rack over a baking sheet.
5. Serve with a hearty side dish and your favorite condiment (tartar sauce, remoulade, or even sugar-free ketchup).
